In a cup (160 g) of homemade yogurt (or store-bought thick consistency) put 2/3 tsp. of baking soda, stir, wait for reaction (I wanted to shoot, but my yogurt began to run away, I had to urgently put it out) and add to the whipping mass. Allow all ingredients to combine.

Add the egg. Whisk everything for a couple of minutes.

And start adding flour and semolina little by little. And first the semolina, so that it has a chance and time to swell, and then the flour. You get a dough like this. It is soft and easy to work. Depending on the moisture content of the flour and the density of the yogurt, the amount of flour may vary - so add gradually.

Let's make balls like this out of the dough. I got a little fussy, I weighed 25 grams per ball. It is not necessary, you can do by eye.

I wanted to add something, so I mixed a tablespoon each of almond flour and sugar and started dipping the balls in the mixture. At the end I guessed to first dip them in a socket with water, and then in this mixture, so that they would stick better. I hope the photo shows what I got. This step is optional, not required! Or you can also dip in poppy seed, coconut, or just sugar.

We put the cookies in a preheated 180 degrees Celsius oven until browned. It took me 15 minutes for each batch.
