1. Carrots, peeled and grated 3 large
2. Tomato, chopped 1 large
3. Onion, chopped ½ small
4. Serrano pepper, seeded and chopped 1
5. Fresh cilantro, chopped 15 sprigs
6. Ketchup ½ cup
7. Oranges, juiced 2 small
8. Lime, juiced 1 small
9. Mexican-style hot sauce (such as Cholula®) 1 tablespoon
10. Salt to taste 1 tablespoon
11. Tostada shells 8
12. Avocado - pitted, peeled, and cubed 1

How to cook deliciously - Carrot Ceviche (Vegan)

1 . Stage

Mix carrots, tomato, onion, serrano pepper, and cilantro together in a bowl.

2 . Stage

Combine ketchup, orange juice, lime juice, and hot sauce in a separate bowl. Pour over vegetables and season with salt. Let stand for 1 hour until flavors are well combined. Drain.

3 . Stage

Serve on tostadas and garnish with avocado.
