Ingredients for - Carrot Ceviche (Vegan)

1. Carrots, peeled and grated - 3 large
2. Tomato, chopped - 1 large
3. Onion, chopped - ½ small
4. Serrano pepper, seeded and chopped - 1
5. Fresh cilantro, chopped - 15 sprigs
6. Ketchup - ½ cup
7. Oranges, juiced - 2 small
8. Lime, juiced - 1 small
9. Mexican-style hot sauce (such as Cholula®) - 1 tablespoon
10. Salt to taste - 1 tablespoon
11. Tostada shells - 8
12. Avocado - pitted, peeled, and cubed - 1

How to cook deliciously - Carrot Ceviche (Vegan)

1. Stage

Mix carrots, tomato, onion, serrano pepper, and cilantro together in a bowl.

2. Stage

Combine ketchup, orange juice, lime juice, and hot sauce in a separate bowl. Pour over vegetables and season with salt. Let stand for 1 hour until flavors are well combined. Drain.

Serve on tostadas and garnish with avocado.
