1. Olive oil - 1 tablespoon
2. Yellow onion, chopped - 1 small
3. Garlic, minced - 3 cloves
4. Chicken broth - 3 cups
5. Chili beans in spicy sauce - 1 (15 ounce) can
6. Black beans, rinsed and drained - 1 (15 ounce) can
7. Corn, drained - 1 (15 ounce) can
8. Diced tomatoes with green chile peppers - 1 (10 ounce) can
9. Red enchilada sauce - 1 (10 ounce) can
10. Chili powder - 1 ½ teaspoons
11. Seasoned salt - 1 teaspoon
12. Ground paprika - ¾ teaspoon
13. Ground cumin - ½ teaspoon
14. Ground black pepper - ½ teaspoon
15. Cream cheese, cubed - 6 ounces
16. Extra sharp Cheddar cheese, grated - 8 ounces
17. Shredded cooked chicken - 3 cups
18. Crushed tortilla chips, or to taste - ½ cup
19. Sour cream, or to taste - ¼ cup
20. Chopped fresh cilantro, or to taste - 2 tablespoons

How to cook deliciously - Cheesy Chicken Tortilla Soup

1. Stage

Heat oil in a large pot over medium heat. Add onion and saute until soft, about 5 minutes. Stir in garlic and cook until fragrant, about 30 seconds.

Stir in chicken broth, chili beans, black beans, corn, diced tomatoes with chiles, and enchilada sauce. Add chili powder, seasoned salt, paprika, cumin, and pepper; stir to combine. Increase heat to high and bring to a boil.

Once the soup is boiling, stir in cream cheese. Reduce heat and stir in Cheddar cheese until melted. Stir in chicken. Serve topped with tortilla chips, sour cream, and cilantro.
