2. 4 large ripe bananas -
3. 2 large eggs -
4. 3/4 c. packed light brown sugar -
5. 1/2 c. vegetable oil -
6. 2 tsp. pure vanilla extract -

8. 3/4 tsp. kosher salt -
9. 2 1/2 c. (200 g.) old-fashioned oats -
10. 1 1/2 c. (180 g.) all-purpose flour -
11. 1 c. (6 oz.) semisweet chocolate chips, divided -

How to cook deliciously - Chocolate Chip Banana Oatmeal Bars

1. Stage

Preheat oven to 350°. Grease a 13" x 9" metal baking pan with cooking spray and line with parchment, leaving an overhang on 2 long opposite sides.

Peel bananas. In a medium bowl, mash 3 ripest bananas with a fork until smooth (you should have about 1 1/4 cups). Chop remaining banana into 1/4" pieces.

In a large bowl, lightly whisk eggs until blended. Add brown sugar, oil, vanilla, baking soda, and salt and whisk until incorporated. Whisk in mashed banana until thoroughly combined, then switch to a rubber spatula and fold in oats and flour. Fold in 3/4 cup chips and chopped banana.

Pour batter into prepared pan; smooth with spatula. Sprinkle with remaining 1/4 cup chips.

Bake bar until firm in the center and golden brown around the edges, 23 to 27 minutes. Let cool.

Using parchment overhang, lift bar out of pan and transfer to a cutting board. Slice into pieces and serve.
