1. Cubed or minced pork stew meat 1 pound
2. Taco seasoning mix 1 (1.25 ounce) package
3. Vegetable oil 1 tablespoon
4. Chunky salsa 1 cup
5. Chili beans, undrained 1 (16 ounce) can
6. Apricot preserves ⅓ cup
7. Taco shells 12
8. Sliced ripe olives, for topping 1 (10 ounce) can

How to cook deliciously - Cowboy Tacos

1 . Stage

Toss pork meat with taco seasoning mix in a plastic resealable bag until coated.

2 . Stage

Heat oil in a skillet over medium-high heat. Fry seasoned pork in hot oil, stirring occasionally, until pork is no longer pink.

3 . Stage

Stir salsa, beans, and apricot preserves into the skillet with pork. Reduce heat to low; simmer until heated through, about 10 minutes.

4 . Stage

Spoon 1/3 cup pork mixture into each taco shell and top with sliced olives.
