Ingredients for - Cowboy Tacos

1. Cubed or minced pork stew meat - 1 pound
2. Taco seasoning mix - 1 (1.25 ounce) package
3. Vegetable oil - 1 tablespoon
4. Chunky salsa - 1 cup
5. Chili beans, undrained - 1 (16 ounce) can
6. Apricot preserves - ⅓ cup
7. Taco shells - 12
8. Sliced ripe olives, for topping - 1 (10 ounce) can

How to cook deliciously - Cowboy Tacos

1. Stage

Toss pork meat with taco seasoning mix in a plastic resealable bag until coated.

2. Stage

Heat oil in a skillet over medium-high heat. Fry seasoned pork in hot oil, stirring occasionally, until pork is no longer pink.

3. Stage

Stir salsa, beans, and apricot preserves into the skillet with pork. Reduce heat to low; simmer until heated through, about 10 minutes.

4. Stage

Spoon 1/3 cup pork mixture into each taco shell and top with sliced olives.
