1. Olive oil - 1 tablespoon
2. Butter, divided - 1 ½ tablespoons
3. Assorted wild mushrooms, sliced - 1 ¼ pounds
4. Salt - 1 pinch
5. Minced shallots - ¼ cup
6. Cognac or brandy - 2 tablespoons
7. Champagne vinegar or white wine vinegar - 1 tablespoon
8. Creme fraiche - ½ cup
9. Chicken broth - ½ cup
10. Chopped fresh marjoram - 1 tablespoon
11. Salt and pepper to taste - 1 tablespoon

How to cook deliciously - Creamy Wild Mushroom Ragoût

1. Stage

Heat olive oil and 1 tablespoon butter in a skillet over medium-high heat. Stir in mushrooms with a pinch of salt. Cook, stirring occasionally, until any liquid evaporates and mushrooms are light brown, 8 to 10 minutes.

Add shallots and remaining 1/2 tablespoon butter; cook and stir until mushrooms are caramelized and almost tender, about 10 minutes.
