Ingredients for - Cucumber Coleslaw

1. 1/3 cup olive oil -
2. 1/4 cup sparkling or dry white wine -
3. 1 tablespoon minced fresh basil -
4. 1 tablespoon Key lime juice -
5. 1 serrano pepper, seeded and minced -
6. 1-1/2 teaspoons minced fresh mint -
7. 1-1/2 teaspoons molasses -
8. 1 teaspoon sugar -
9. 1 garlic clove, minced -
10. 3/4 teaspoon salt -
11. 3/4 teaspoon grated lime zest -
12. 1/2 teaspoon pepper -
13. Coleslaw: -
14. 3 English cucumbers, julienned -
15. 2 cups fresh arugula or baby spinach, coarsely chopped -
16. 1 cup fresh snow peas, cut into 1/2-inch pieces -
17. 1/2 cup sliced almonds, toasted -
18. 1 cup dried cranberries -

How to cook deliciously - Cucumber Coleslaw

1. Stage

In a small bowl, combine the first 12 ingredients. In a large bowl, combine cucumbers, arugula, peas, almonds and cranberries.

2. Stage

Just before serving, pour dressing over salad; toss to coat.
