Ingredients for - Debra's Tomato Salad

1. Tomatoes, cut into wedges - 8 large
2. Red onions - cut into wedges and separated - 2
3. Yellow onions - cut into wedges and separated - 2
4. Cucumbers, peeled and diced - 2
5. Olive oil - 1 cup
6. Red wine vinegar - ¼ cup
7. White sugar - 1 teaspoon
8. Minced garlic - 1 tablespoon
9. Minced fresh oregano - 2 teaspoons
10. Salt and pepper to taste - 2 teaspoons
11. Romaine lettuce, torn into bite-size pieces - 1 head
12. Hard-cooked eggs, sliced - 2
13. Anchovy filets (Optional) - 8

How to cook deliciously - Debra's Tomato Salad

1. Stage

In a large bowl, combine tomatoes, red onions, yellow onions, and cucumbers. Mix together olive oil, vinegar, sugar, garlic, oregano, salt, and pepper. Pour dressing over tomato mixture, and toss to coat evenly. Cover and refrigerate overnight.

2. Stage

Arrange lettuce on plates, and place marinated tomato salad on top. Garnish with egg slices and anchovies (optional).
