1. Rotisserie chicken carcasses - 2 medium
2. Water - 8 cups
3. Carrots, cut into large chunks - 2 medium
4. Celery, cut into large chunks - 2 large stalks
5. Onion, cut into large chunks - 1 large
6. Fresh spinach - ½ cup
7. Salt - 2 teaspoons

1. Stage

Put chicken carcasses, water, carrots, celery, onion, spinach, and salt into a large pot; bring to a boil. Reduce heat and simmer for 25 minutes.

Strain broth and discard solids.
