1. Yellow potatoes, peeled and cut into thin wedges 6 large
2. Water ¾ cup
3. Lemon juice ½ cup
4. Extra-virgin olive oil ⅓ cup
5. Dijon mustard 1 tablespoon
6. Dried oregano 1 teaspoon
7. Salt and ground black pepper to taste 1 pinch

1 . Stage

Preheat the oven to 350 degrees F (175 degrees C).

Arrange potatoes in a single layer in a large baking dish or roasting pan.
