Ingredients for - Ham and Lentil Soup

1. 1 meaty ham bone -
2. 6 cups water -
3. 1-1/4 cups dried lentils, rinsed -
4. 1 can (28 ounces) diced tomatoes, undrained -
5. 2 to 3 carrots, sliced -
6. 2 celery ribs, sliced -
7. 1/4 cup chopped green onions -
8. 1/2 teaspoon salt -
9. 1/2 teaspoon garlic powder -
10. 1/2 teaspoon dried oregano -
11. 1/8 teaspoon pepper -
12. 12 ounces bulk pork sausage, cooked and drained -
13. 2 tablespoons chopped fresh parsley -

How to cook deliciously - Ham and Lentil Soup

1. Stage

In a Dutch oven or large pot, bring the ham bone and water to a boil. Reduce the heat and let simmer, covered, for 1 hour and 30 minutes, then remove the ham bone and set it aside. 2. Stage

Add the lentils, tomatoes, carrots, celery, onion, salt, garlic powder, oregano and pepper to the broth. Bring everything to a boil, and then reduce the heat. Cover and let everything simmer until the lentils and vegetables are tender, 30 to 40 minutes.

3. Stage

As the soup simmers, remove ham from the bone and coarsely chop. Once the lentils and veggies are softened, stir in the chopped ham, cooked sausage and fresh parsley. Give everything a big stir, and simmer it until heated through.
