1. lb. mahon cheese -
2. 1/4 lb. membrillo or spanish quince paste -
3. 1/2 c. spanish extra-virgin olive oil -
4. 3 tbsp. sherry vinegar -
5. Sea salt to taste -
6. 4 sprig fresh dill -

How to cook deliciously - Mahon con Membrillo

1. Stage

Cut the cheese and the membrillo into 1/2-inch cubes. Place two or three cubes of each on Chinese-style soup spoons.

2. Stage

Whisk the olive oil and vinegar together in a mixing bowl. Spoon the dressing over the cheese and membrillo. Season to taste with salt and garnish with dill.
