1. Fresh button mushrooms - 16 large
2. Cherry tomatoes - 16
3. Thickly sliced zucchini - ½ cup
4. Sliced red bell pepper - ½ cup
5. Sliced yellow bell pepper - ½ cup
6. Sliced yellow squash - ½ cup
7. Sliced red onion - ½ cup
8. Olive oil - ½ cup
9. Soy sauce - ½ cup
10. Lemon juice - ½ cup
11. Garlic, crushed - ½ clove

How to cook deliciously - Marinated Veggies

1. Stage

Place mushrooms, tomatoes, zucchini, bell peppers, squash, and red onion into a large bowl.

Mix together olive oil, soy sauce, lemon juice, and garlic in a small bowl. Pour over vegetables; toss to coat. Cover the bowl and marinate in the refrigerator for 30 minutes.
