1. Mezze (short) penne pasta - ½ (16 ounce) package
2. Sliced and quartered cucumber - 1 cup
3. Halved cherry tomatoes - 1 cup
4. Minced shallot - 2 tablespoons
5. Pouch wild-caught pink salmon - 1 (2.6 ounce)
6. Extra-virgin olive oil - ¼ cup
7. White wine vinegar - 1 tablespoon
8. Freshly squeezed lemon juice - 1 tablespoon
9. Lemon-pepper seasoning - 1 teaspoon
10. Dijon mustard - ½ teaspoon
11. Salt - ½ teaspoon
12. Dried dill weed - ¼ teaspoon

How to cook deliciously - Mediterranean Salmon Pasta Salad

1. Stage

Bring a large pot of lightly salted water to a boil. Add penne and cook, stirring occasionally, until tender yet firm to the bite, about 10 minutes. Drain, rinse in cold water, drain well, and place in a serving bowl.

Top pasta with cucumber, tomatoes, and shallot. Break up salmon and sprinkle on top.
