1. Mezze (short) penne pasta ½ (16 ounce) package
2. Sliced and quartered cucumber 1 cup
3. Halved cherry tomatoes 1 cup
4. Minced shallot 2 tablespoons
5. Pouch wild-caught pink salmon 1 (2.6 ounce)
6. Extra-virgin olive oil ¼ cup
7. White wine vinegar 1 tablespoon
8. Freshly squeezed lemon juice 1 tablespoon
9. Lemon-pepper seasoning 1 teaspoon
10. Dijon mustard ½ teaspoon
11. Salt ½ teaspoon
12. Dried dill weed ¼ teaspoon

1 . Stage

Bring a large pot of lightly salted water to a boil. Add penne and cook, stirring occasionally, until tender yet firm to the bite, about 10 minutes. Drain, rinse in cold water, drain well, and place in a serving bowl.

Top pasta with cucumber, tomatoes, and shallot. Break up salmon and sprinkle on top.
