Ingredients for - Moroccan Couscous with Rhubarb

1. Vegetable oil 1 tablespoon
2. Onion, chopped 1 medium
3. Chopped dried apricots ½ cup
4. Finely chopped rhubarb ½ cup
5. Couscous 1 cup
6. Chicken stock 1 ¼ cups
7. Salt ½ teaspoon
8. Ground cumin ½ teaspoon
9. Ground ginger ¼ teaspoon
10. Ground cardamom ¼ teaspoon
11. Ground allspice ¼ teaspoon
12. Ground cinnamon ¼ teaspoon
13. Ground cayenne pepper ⅛ teaspoon
14. Ground cloves 1 pinch

How to cook deliciously - Moroccan Couscous with Rhubarb

1 . Stage

Heat oil in a saucepan over medium heat. Add onion and cook until soft and translucent, about 5 minutes. Stir in apricots and rhubarb. Cook for 2 more minutes.

2 . Stage

Mix in couscous, chicken stock, salt, cumin, ginger, cardamom, allspice, cinnamon, cayenne, and cloves - mixture will be thick. Stir and bring to a boil. Cover and remove from heat.

3 . Stage

Let sit for 10 minutes until all the liquid is absorbed.
