1. Vegetable oil - 1 tablespoon
2. Onion, chopped - 1 medium
3. Chopped dried apricots - ½ cup
4. Finely chopped rhubarb - ½ cup
5. Couscous - 1 cup
6. Chicken stock - 1 ¼ cups
7. Salt - ½ teaspoon
8. Ground cumin - ½ teaspoon
9. Ground ginger - ¼ teaspoon
10. Ground cardamom - ¼ teaspoon
11. Ground allspice - ¼ teaspoon
12. Ground cinnamon - ¼ teaspoon
13. Ground cayenne pepper - ⅛ teaspoon
14. Ground cloves - 1 pinch

How to cook deliciously - Moroccan Couscous with Rhubarb

1. Stage

Heat oil in a saucepan over medium heat. Add onion and cook until soft and translucent, about 5 minutes. Stir in apricots and rhubarb. Cook for 2 more minutes.

Mix in couscous, chicken stock, salt, cumin, ginger, cardamom, allspice, cinnamon, cayenne, and cloves - mixture will be thick. Stir and bring to a boil. Cover and remove from heat.

Let sit for 10 minutes until all the liquid is absorbed.
