1. Pad Thai rice noodles, soaked in water overnight and drained 2 cups
2. Vegetable broth ½ cup
3. Vegetable oil 2 tablespoons
4. Brown sugar 1 tablespoon
5. Soy sauce 1 tablespoon
6. Rice wine vinegar 1 tablespoon
7. Peanut butter 1 ½ teaspoons
8. Chopped fresh cilantro 1 teaspoon
9. Onion Powder 1 teaspoon
10. Tamarind paste 1 teaspoon
11. Hot chile paste 1 teaspoon
12. Garlic powder ¾ teaspoon
13. Sesame oil ½ teaspoon
14. Crushed red pepper flakes ½ teaspoon
15. Ground coriander ¼ teaspoon
16. Ground ginger ¼ teaspoon
17. Salt and ground black pepper to taste ¼ teaspoon
18. Vegetable oil 3 tablespoons
19. Chopped broccoli ⅓ cup
20. Chopped carrots ⅓ cup
21. Snow peas, trimmed ⅓ cup
22. Sliced water chestnuts, drained ⅓ cup
23. Baby corn, drained ⅓ cup
24. Sliced fresh mushrooms ⅓ cup
25. Sliced zucchini ⅓ cup
26. Vegetable oil 1 tablespoon
27. Chopped peanuts for topping 1 tablespoon
28. Chopped cilantro 1 tablespoon
29. Paprika for garnish 1 pinch

How to cook deliciously - Nicola's Pad Thai

1 . Stage

Soak uncooked noodles in 8 cups of water until soft, 8 hours or overnight.

2 . Stage

Drain rice noodles and set aside.

3 . Stage

Whisk together vegetable broth, 2 tablespoons vegetable oil, brown sugar, soy sauce, rice wine vinegar, peanut butter, 1 teaspoon fresh cilantro, onion powder, tamarind paste, hot chile paste, garlic powder, sesame oil, red pepper flakes, ground coriander, ground ginger, salt, and ground black pepper in a saucepan.

4 . Stage

Heat sauce over medium heat until it bubbles; reduce heat to low, and simmer sauce while you prepare the remaining ingredients.

5 . Stage

Heat 3 tablespoons of vegetable oil in a large wok over medium heat.

6 . Stage

Cook and stir broccoli, carrots, snow peas, water chestnuts, baby corn, mushrooms, and zucchini in the wok until tender, 8 to 10 minutes.

7 . Stage

Add the drained noodles and 1 tablespoon vegetable oil to vegetables. Cook and stir until noodles are heated through, 2 to 3 minutes.

Remove the wok from heat and pour the sauce over vegetables and rice noodles.

Toss to fully coat the vegetables and rice noodles with sauce.
