How to cook deliciously - Ossobucco with oranges
1. Stage
Prepared meat for the osso buco is better to take out of the fridge beforehand. Salt and immediately fry in a large deep (!) heavy frying pan in olive oil.

Roast on both sides until golden brown. Take the meat out of the pan and keep warm.

Prepare all the vegetables. Wash carrots, onions, shallots and tomatoes and not too finely chop them. Peel the garlic and prepare the aromatic herbs.

Place the chopped vegetables along with herbs and black pepper in the pan where the meat was roasted. Roast the vegetable mixture for a couple of minutes.

Pour freshly squeezed orange juice and add grated orange zest. Simmer for 3 to 4 minutes.

Then add the tomato paste and wine.

Place the meat in the pan with the vegetable gravy. Fill with boiling water or, if available, beef broth, up to the level of the meat. Salt everything a little more, put the lid on and stew for about 2 hours. Words can't tell you what flavors are wafting around the kitchen!
