How to cook deliciously - Pear pie with almonds
1. Stage
Peel the pears, cut them in half and remove the core. Pour the sugar into the water, bring to a boil. Drop the pears into the boiling syrup and simmer for 10 minutes. Take the pears out of the syrup and leave to cool completely.
2. Stage
Mix all the ingredients for the dough and knead the dough. Cover with clingfilm and place in the refrigerator.
3. Stage
Vanilla cream. Bring the milk to the boil and pour in the vanilla extract.

With a hand mixer, whip the yolks with the sugar and stir in the starch. Here I had my first disaster... the mixer broke. Pour half of the hot milk into the egg mixture, beating constantly. Pour the whisked mixture back into the remaining milk and, stirring constantly, boil the pudding. As soon as the pudding begins to fall away from the walls of the pan, pour it into a cooled bowl. Leave to cool completely.
5. Stage
Almond cream. Beat the butter and sugar into a foam. Add one egg at a time, beating constantly.
6. Stage
Stir in the ground almonds and starch. Stir with a spatula.
7. Stage
Layer a 28cm. form with the dough, making high sides. To the almond cream intervene in parts vanilla cream. Pour the vanilla and almond cream on the pastry.
8. Stage
Cut each pear half into thin slices without separating them. Place the sliced pears on top of the cream. Like this.
9. Stage
Lay out all the pears, making distance between them.
