We put the meat and broth to boil. I took pork half on half meat and ribs. In a pot we pour water, put the meat, bring to a boil and skim the foam. Put a whole onion in husk. Boil the meat for about 30 minutes. Salt the broth to taste. From the onion in the husk broth will be golden. Prepare vegetables for the soup and butter. I do not recommend replacing the butter with any other kind of butter. It will taste completely different!
2. Stage
We need a pot with a thick bottom, in which we will first toast the vegetables in butter, and then cook the soup. If you don't have one, you just need to take a frying pan or sauté pan and stew the vegetables there. Melt the butter and put chopped onions. Gild it. We add carrots, turn down the heat, put the lid on and simmer vegetables for 5 minutes. Put bell peppers, also chopped into small cubes. We simmer another 5 minutes.

Cut the potatoes into small cubes and place them with the vegetables. Let's simmer for about 15 minutes so that all the vegetables soak in oil and "make friends". The vegetables will be almost ready. Pour 1.5 liters of strained broth. Bring to a boil, turn down the heat and cook until the potatoes are ready. It is fast. At the very end we put peppers, bay leaves, taste for salt. If you think it's not salty, add salt. Cook another 3-5 minutes and remove from the heat.

Today I'm making spicy Borodino bread croutons for this soup. A perfect pairing! To serve, we cut the boiled pork into pieces and finely chop the green onions.
