2. Firm tofu, cubed ½ (12 ounce) package
3. Carrots, peeled and diced 2
4. Celery, diced 2 stalks
5. Onion, minced ¼
6. Garlic, minced 2 cloves
7. Salt and ground black pepper to taste 2 cloves
8. Cooked white rice 3 cups
9. Eggs, beaten 4 large
10. Frozen chopped spinach, thawed 1 (8 ounce) package
11. Sriracha hot sauce, or to taste 1 teaspoon

1 . Stage

Heat oil in a skillet over medium-high heat. Add tofu, carrots, celery, onion, and garlic; cook and stir until vegetables are just soft; 5 to 10 minutes. Season with salt and pepper.

Stir rice, egg, and spinach into tofu mixture until egg is no longer runny, about 5 minutes. Stir in Sriracha sauce; season with salt and pepper.
