1. Gluten-free all-purpose baking flour (such as Bob's Red Mill®) - 1 ¾ cups
2. White sugar - ⅔ cup
3. Baking powder - 2 teaspoons
4. Xanthan gum - 1 ½ teaspoons
5. Ground cinnamon - 1 teaspoon
6. Salt - ½ teaspoon
7. Baking soda - ¼ teaspoon
8. Canned pumpkin - 1 cup
9. Eggs, beaten - 2
10. Butter, softened - ⅓ cup
11. Chopped walnuts - ½ cup

1. Stage

Preheat oven to 350 degrees F (175 degrees C). Grease a 9x5-inch loaf pan.

Sift flour, sugar, baking powder, xanthan gum, cinnamon, salt, and baking soda together in a large mixing bowl. Beat pumpkin, eggs, and butter together in a separate bowl; add to flour mixture and beat until the mixture blends into a batter. Stir walnuts through the batter.
