1. Cabbage, shredded - 1 small head
2. Rock salt - ¼ cup
3. Carrot, cut into thin strips - 1 small
4. Vinegar - 3 tablespoons
5. Vegetable oil - 2 tablespoons
6. White sugar, or to taste - 1 tablespoon
7. Sesame oil - 1 teaspoon
8. Toasted sesame seeds, ground - 1 teaspoon
9. Cayenne pepper, or to taste - ½ teaspoon
10. Salt - ¼ teaspoon

1. Stage

Combine cabbage and rock salt together in a bowl. Let stand 15 minutes, stirring often. Rinse lightly and drain.

Mix cabbage, carrot, vinegar, vegetable oil, sugar, sesame oil, sesame seeds, cayenne pepper, and salt together in a bowl. Refrigerate until chilled, at least 30 minutes.
