1. Sweet potatoes, peeled and cut in 1-inch chunks - 2 large
2. Vidalia or other sweet onions, cut in 1-inch chunks - 2 medium
3. Olive oil - 3 tablespoons
4. Amaretto liqueur - ¼ cup
5. Dried thyme - 1 teaspoon
6. Salt and freshly ground black pepper, to taste - 1 teaspoon
7. Sliced almonds, toasted - ¼ cup
