In a large skillet coated with cooking spray, cook turkey, onion, celery and green pepper over medium heat until meat is no longer pink, breaking it into crumbles; drain. Stir in soup, ketchup, mustard, brown sugar and pepper.
2. Stage
Transfer to a 3-qt. slow cooker. Cover and cook on low to allow flavors to blend, about 4 hours. Serve on buns, with pickles if desired.
