2. Matchstick-cut carrots - 1 cup
3. Celery, chopped - 3 stalks
4. Yellow bell pepper, chopped - 1
5. Red onion, chopped - 1 small
6. White beans, drained and rinsed - 1 (10 ounce) can
7. Diced tomatoes, with liquid - 1 (10 ounce) can
8. Vegetable broth - 1 cup
9. Quinoa - 1 cup
10. Hot giardiniera - 4 ounces
11. Garlic powder - 1 teaspoon
12. Salt and ground black pepper to taste - 1 teaspoon

How to cook deliciously - Spicy Veggie and White Bean Quinoa

1. Stage

Heat oil in a deep pan over medium-high heat. Saute carrots, celery, bell pepper, and onion until crisp-tender, about 5 minutes. Add beans, tomatoes, broth, quinoa, giardiniera, garlic powder, salt, and pepper. Bring to a boil. Turn down to a simmer and cook until most of the liquid has been absorbed, about 20 minutes.
