3. Celery, chopped 3 stalks
4. Yellow bell pepper, chopped 1
5. Red onion, chopped 1 small
6. White beans, drained and rinsed 1 (10 ounce) can
7. Diced tomatoes, with liquid 1 (10 ounce) can
8. Vegetable broth 1 cup
9. Quinoa 1 cup
10. Hot giardiniera 4 ounces
11. Garlic powder 1 teaspoon
12. Salt and ground black pepper to taste 1 teaspoon

Heat oil in a deep pan over medium-high heat. Saute carrots, celery, bell pepper, and onion until crisp-tender, about 5 minutes. Add beans, tomatoes, broth, quinoa, giardiniera, garlic powder, salt, and pepper. Bring to a boil. Turn down to a simmer and cook until most of the liquid has been absorbed, about 20 minutes.
