1. Limes, juiced - 2
2. Asian red chili paste - 1 tablespoon
3. White sugar - 1 tablespoon
4. Grapeseed oil, or more as needed - 1 teaspoon
5. Napa cabbage, shredded - 1 small head
6. Carrots, shredded - 2
7. Red bell pepper, thinly sliced - 1 small
8. Seedless cucumber, sliced paper-thin - ½
9. Cilantro, chopped - ⅓ cup
10. Peanuts, chopped, or more to taste - ½ cup
11. Salt and ground black pepper to taste - ½ cup

1. Stage

Whisk lime juice, chili paste, and sugar together in a small bowl. Add oil in slow stream while still whisking.

2. Stage

Combine napa cabbage, carrots, bell pepper, cucumber, cilantro, and peanuts in a large bowl. Season with salt and pepper. Pour dressing over vegetables and toss with tongs to coat. Chill salad for at least 1 hour. Stir and adjust seasonings before serving.
