1. Baby spinach leaves - 4 cups
2. Mangos - peeled, seeded, and diced - 2 medium
3. Chopped fresh cilantro - ½ cup
4. Red chile pepper, cut into thin strips - 1 small
5. Sea salt and cracked black pepper to taste - 1 small
6. Kaffir lime leaves - 2
7. Extra-virgin olive oil - 3 tablespoons
8. Soy sauce - 2 tablespoons
9. Lime juice - 2 tablespoons
10. Grated lime zest - 1 tablespoon
11. Sesame oil - 1 tablespoon
12. Fish sauce - 1 tablespoon
13. Minced fresh ginger - 1 tablespoon
14. Finely chopped fresh lemongrass - 1 tablespoon
15. Thai chile, chopped - 1 small
16. Garlic, minced - 1 clove
17. Coconut sugar - 1 teaspoon

How to cook deliciously - Thai-Inspired Spinach and Mango Salad

1. Stage

Combine spinach, mangos, cilantro, and chile pepper in a large mixing bowl. Season with sea salt and pepper.

2. Stage

Slice lime leaves in a chiffonade cut (long, thin strips). Place in a small food processor with olive oil, soy sauce, lime juice, lime zest, sesame oil, fish sauce, ginger, lemongrass, Thai chile, garlic, and coconut sugar; blitz until combined.
