Ingredients for - Tropical Chicken Salad

1. 2 cups cubed cooked chicken -
2. 1 cup chopped celery -
3. 1 cup mayonnaise -
4. 1/2 to 1 teaspoon curry powder -
5. 1 can (20 ounces) chunk pineapple, drained -
6. 2 large firm bananas, sliced -
7. 1 can (11 ounces) mandarin oranges, drained -
8. 1/2 cup sweetened shredded coconut -
9. Salad greens, optional -
10. 3/4 cup salted peanuts or cashew halves -

How to cook deliciously - Tropical Chicken Salad

1. Stage

Place chicken and celery in a large bowl. Combine mayonnaise and curry powder; add to chicken mixture and mix well. Cover and chill for at least 30 minutes.

2. Stage

Before serving, add the pineapple, bananas, oranges and coconut; toss gently. Serve on salad greens if desired. Sprinkle with nuts.
