1. Coconut oil - 2 tablespoons
2. Chopped carrots - 2 cups
3. Celery with leaves, chopped - 3 stalks
4. White onion, sliced - 1
5. Garlic, minced - 3 cloves
6. Whole star anise pods - 3
7. Vegetable broth - 6 ⅓ cups
8. Stemmed and chopped carrot tops - ½ cup
9. Chopped fresh basil - ¼ cup
10. Chopped fresh tarragon - 1 tablespoon
11. Salt and ground black pepper to taste - 1 pinch

How to cook deliciously - Vegan Carrot-Top Vegetable Soup

1. Stage

Heat coconut oil in a large pot over medium heat. Add carrots, celery, onion, garlic, and star anise; cook and stir until onion is translucent, 5 to 7 minutes. Pour in vegetable broth; bring to a boil.

Stir carrot tops, basil, and tarragon into the pot; simmer until wilted, about 5 minutes. Season with salt and pepper. Discard star anise before serving.
