Fry thinly sliced onions in vegetable oil until lightly caramelized. White sweet onions are best here.

For the dressing, mix white wine vinegar with salt.

Add mustard. Mustard with honey is perfect for this salad. It is soft, sweet, and very flavorful.

Beat with a whisk until smooth.

Gradually pour in the olive oil, beating with a whisk until emulsified.

Season with freshly ground pepper and finely chopped basil.
