Ingredients for - Big Ed's Cajun Shrimp Soup

1. Butter - 1 tablespoon
2. Chopped green bell pepper - ½ cup
3. Sliced green onions - ¼ cup
4. Garlic, minced - 1 clove
5. Tomato-vegetable juice cocktail - 3 cups
6. Clam juice - 1 (8 ounce) bottle
7. Water - ½ cup
8. Dried thyme - ¼ teaspoon
9. Dried basil - ¼ teaspoon
10. Red pepper flakes - ¼ teaspoon
11. Bay leaf - 1
12. Salt - ½ teaspoon
13. Uncooked long-grain white rice - ½ cup
14. Fresh shrimp, peeled and deveined - ¾ pound
15. Hot pepper sauce to taste - ¾ pound

How to cook deliciously - Big Ed's Cajun Shrimp Soup

1. Stage

Melt butter in a large pot over medium heat. Saute green bell pepper, onions, and garlic until tender. Stir in vegetable juice, clam juice, and water. Season with thyme, basil, red pepper, bay leaf, and salt. Bring to a boil, and stir in rice. Reduce heat, and cover. Simmer 15 minutes, until rice is tender.

2. Stage

Stir in shrimp, and cook 5 minutes, or until shrimp are opaque. Remove the bay leaf, and season with hot sauce.
