Ingredients for - Black Bean Chili

1. Olive oil - 1 tablespoon
2. Roma (plum) tomatoes, diced - 6
3. Red bell pepper, seeded and chopped - 2
4. Onion, chopped - 1
5. Fresh mushrooms, quartered - 10
6. Fresh corn kernels - 1 cup
7. Jalapeno pepper, seeded and minced - 1
8. Chili powder - 1 tablespoon
9. Ground cumin - 1 teaspoon
10. Ground black pepper - 1 teaspoon
11. Black beans, drained and rinsed - 2 (15 ounce) cans
12. Chicken broth or vegetable broth - 1 ½ cups
13. Salt - 1 teaspoon

How to cook deliciously - Black Bean Chili

1. Stage

Heat olive oil in a large saucepan over medium-high heat. Sauté tomatoes, bell pepper, onion, mushrooms, corn, and jalapeño until onion is translucent, about 10 minutes. Season with chili powder, cumin, and black pepper. Stir in black beans, broth, and salt; bring to a boil.

2. Stage

Reduce heat to medium-low. Remove 1 1/2 cups chili to a food processor or blender; purée until smooth and stir back into chili in the pan. Serve hot by itself or over rice.
