Ingredients for - Bob's Bean Salad

1. Red bell pepper, chopped - 1 medium
2. Medium onion, chopped - ⅓
3. Marinated artichoke hearts, drained and chopped - 1 (6 ounce) jar
4. Kidney beans, drained and rinsed - 1 (12 ounce) can
5. Pinto beans, drained and rinsed - 1 (12 ounce) can
6. Garbanzo beans, drained and rinsed - 1 (12 ounce) can
7. Crumbled feta cheese - 2 ounces
8. Olive oil - ¼ cup
9. White vinegar or white wine vinegar - ⅛ cup
10. Balsamic Vinegar - ⅛ cup
11. Salt - 1 teaspoon
12. Sugar - 1 teaspoon

How to cook deliciously - Bob's Bean Salad

1. Stage

In a large bowl, toss red bell pepper, onion, and artichokes together with kidney, pinto, and garbanzo beans. Set aside.

2. Stage

In a separate bowl, whisk salt and sugar with white and balsamic vinegars until completely dissolved. Slowly whisk in olive oil. Adjust seasoning as desired.

3. Stage

Pour dressing over bean mixture, and toss to coat. Cover and refrigerate at least one hour before serving. Serve chilled.
