1. 1 tablespoon canola oil -
2. 6 green onions, chopped -
3. 1 tablespoon minced fresh gingerroot -
4. 2 garlic cloves, minced -
5. 1/4 teaspoon crushed red pepper flakes -
6. 1-1/2 cups dried lentils, rinsed -
7. 1 teaspoon ground turmeric -
8. 1/2 teaspoon salt -
9. 5-1/2 cups vegetable stock -
10. 2 large tomatoes, chopped -
11. 1/2 cup flaked coconut -
12. 2 tablespoons minced fresh mint -
13. 3 cups hot cooked rice -
14. 1/3 cup plain Greek yogurt -

How to cook deliciously - Coconut Lentils with Rice

1. Stage

In a large saucepan, heat oil over medium heat; saute green onions, ginger, garlic and pepper flakes until onions are tender, 2-4 minutes. Stir in lentils, turmeric, salt and stock; bring to a boil. Reduce heat; simmer, covered, until lentils are tender, 25-30 minutes, stirring occasionally.

2. Stage

Stir in tomatoes, coconut and mint. Serve with rice; top with yogurt.
