Ingredients for - Coconut Lentils with Rice

1. 1 tablespoon canola oil
2. 6 green onions, chopped
3. 1 tablespoon minced fresh gingerroot
4. 2 garlic cloves, minced
5. 1/4 teaspoon crushed red pepper flakes
6. 1-1/2 cups dried lentils, rinsed
7. 1 teaspoon ground turmeric
8. 1/2 teaspoon salt
9. 5-1/2 cups vegetable stock
10. 2 large tomatoes, chopped
11. 1/2 cup flaked coconut
12. 2 tablespoons minced fresh mint
13. 3 cups hot cooked rice
14. 1/3 cup plain Greek yogurt

How to cook deliciously - Coconut Lentils with Rice

1 . Stage

In a large saucepan, heat oil over medium heat; saute green onions, ginger, garlic and pepper flakes until onions are tender, 2-4 minutes. Stir in lentils, turmeric, salt and stock; bring to a boil. Reduce heat; simmer, covered, until lentils are tender, 25-30 minutes, stirring occasionally.

2 . Stage

Stir in tomatoes, coconut and mint. Serve with rice; top with yogurt.
