1. Gingersnap cookies, crushed - 1 (16 ounce) package
2. Brown sugar - ⅓ cup
3. Butter, melted, or as needed - ¼ cup
4. Ground ginger - 1 tablespoon
5. Cream cheese, softened - 2 (8 ounce) packages
6. Eggs - 2
7. White sugar - ½ cup
8. Lemon juice - ¼ cup
9. Lemon extract - 2 teaspoons

Preheat oven to 350 degrees F (175 degrees C).

Mix cookies, brown sugar, butter, and ground ginger together in a bowl; press into the bottom of a 9x13-inch baking dish.
