1. Red wine vinegar - ⅛ cup
2. Mirin (Japanese sweet wine) - ¼ cup
3. Packed brown sugar - ⅛ cup
4. Grated fresh ginger - 3 teaspoons
5. Fresh lime juice - ⅛ cup
6. Cucumber, thinly sliced - 1 large
7. Thinly sliced onion - ¼ cup

1. Stage

In a serving bowl, stir together the red wine vinegar, mirin, brown sugar, ginger and lime juice. Add the cucumber and onion, and toss gently to coat. Chill for 30 minutes to blend flavors before serving.
