2. Red wine vinegar ¼ cup
3. Garlic, minced 2 cloves
4. Dried oregano 1 teaspoon
5. Dijon mustard 1 teaspoon
6. Salt ½ teaspoon
7. Ground black pepper ½ teaspoon
8. Gemelli pasta 1 (16 ounce) package
9. Firmly packed baby spinach leaves 3 cups
10. Cherry tomatoes, halved 1 pint
11. Crumbled feta cheese 1 (6 ounce) container
12. Pitted kalamata olives, halved ½ cup
13. English cucumber, peeled and diced ¾ medium
14. Red onion, thinly sliced ½ large

How to cook deliciously - Greek-Inspired Gemelli Pasta Salad

1 . Stage

Whisk together olive oil, vinegar, garlic, oregano, Dijon, salt, and pepper in a small bowl until well combined.

2 . Stage

Bring a large pot of lightly salted water to a boil. Add gemelli and cook, stirring occasionally, until tender yet firm to the bite, 8 to 11 minutes. Drain and rinse under cold water. Drain again.

3 . Stage

Transfer gemelli to a large bowl. Add spinach, cherry tomatoes, feta cheese, Kalamata olives, cucumber, and red onion. Toss with dressing and serve.
