1. Olive oil - 1 tablespoon
2. Lean ground turkey - 1 pound
3. Cubed butternut squash - 2 cups
4. Onion, chopped - 1 medium
5. 1% milk - 1 cup
6. Shredded mozzarella cheese - 1 cup
7. Butter, melted - ¼ cup
8. Eggs - 2 large
9. Salt - ½ teaspoon
10. Ground black pepper - ¼ teaspoon
11. Crushed buttery round crackers (such as Ritz®) - 1 cup

How to cook deliciously - Kristin's Turkey Butternut Squash Casserole

1. Stage

Preheat the oven to 375 degrees F (190 degrees C). Grease a 9-inch square baking dish.

2. Stage

Heat olive oil in a skillet over medium heat. Add ground turkey; cook and stir until crumbly and browned, 5 to 10 minutes. Add butternut squash and onion; cook and stir until squash is slightly tender, 5 to 10 minutes. Drain any excess grease from the skillet.

Whisk milk, mozzarella cheese, melted butter, eggs, salt, and pepper together in a bowl. Gradually stir milk mixture into turkey mixture. Transfer the skillet contents to the prepared baking dish. Sprinkle crushed crackers over casserole.

Bake in the preheated oven until cooked through and bubbling, 25 to 30 minutes.
