1. Canola oil - 1 tablespoon
2. Lamb stew meat - 4 pounds
3. Potatoes, peeled and cut into 1-inch pieces - 6 medium
4. Onion, thinly sliced - 1
5. Cinnamon stick - 1
6. Freshly grated ginger - 4 tablespoons
7. Garam masala - 4 teaspoons
8. Freshly minced garlic - 1 ½ tablespoons
9. Minced jalapeno pepper - 1 tablespoon
10. Ground coriander - 1 tablespoon
11. Turmeric - 2 teaspoons
12. Salt - 2 teaspoons
13. Cayenne pepper - ½ teaspoon
14. Diced tomatoes - 2 (15 ounce) cans
15. Chopped cilantro - ½ cup

How to cook deliciously - Lamb Vindaloo

1. Stage

Heat oil in a large skillet over medium heat. Add lamb, potatoes, onion, cinnamon stick, ginger, garam masala, garlic, jalapeno pepper, coriander, turmeric, salt, and cayenne pepper. Reduce heat and simmer, stirring occasionally, until onion softens, about 20 minutes.

Add tomatoes to the skillet with the lamb mixture and stir well. Cover and simmer over low heat until lamb is tender, 30 to 40 minutes more.
