1. Potatoes, peeled - 10 pounds
2. Butter - ½ cup
3. Heavy cream - ⅓ cup
4. Salt - 1 tablespoon
5. White sugar - 1 tablespoon
6. All-purpose flour - 2 ½ cups

Place potatoes in a large pot and cover with water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes; drain.

Lightly flour a clean cloth and roll out lefse balls to 1/8-inch thick. Dotdash Meredith Food Studios

Heat a griddle over high heat.

Cook lefse on the hot griddle until brown blisters form, about 1 minute per side. Place cooked lefse on a damp towel to cool slightly.
