1. Stage
Season chicken with salt and pepper on both sides.

Heat a heavy bottom sauté pan to medium-high heat and pour in the olive oil.

Once pan starts to lightly smoke add the chicken breast skin side down while gently shaking the pan.

Lower the heat to medium and cook for 3 minutes. Place the pan with the chicken in it into a 450-degree F oven. Cook for 10 minutes. Do not flip the chicken over.

Remove pan from the oven, flip the chicken over, and let sit in the pan for two minutes with no heat under it. This is resting and finishing off the chicken.

Serve with a simple salad or vegetables for a light and delicious meal.
