1. 1 c. extra-virgin olive oil
2. 1/4 c. Fresh rosemary leaves
3. 1/4 c. coarsely chopped chives
4. Salt and freshly ground pepper
5. 24 flour tortillas
6. 1 1/4 lb. fresh mozzarella
7. 1 small red onion
8. 3 tsp. coarsely ground black pepper
9. Salt and freshly ground pepper
10. Olive oil
11. 1/2 c. grated Parmesan cheese
12. 32 slice very thin slices prosciutto di Parma

1 . Stage

Combine the oil, rosemary, chives, and a pinch each of salt and pepper in a food processor and process until smooth. Pour through a fine strainer; store in the refrigerator until ready to use.

Cut into quarters, top each with 1 slice of prosciutto, and drizzle with a little rosemary oil.
