Ingredients for - Quinoa Squash Muffins

1. Water - 1 cup
2. Uncooked quinoa, rinsed and drained - ½ cup
3. All-purpose flour - 1 ½ cups
4. Whole wheat flour - 1 cup
5. Salt - ½ teaspoon
6. Ground cinnamon - 1 ½ teaspoons
7. Baking powder - 1 ½ teaspoons
8. Baking soda - 1 teaspoon
9. Ground cloves (Optional) - 1 pinch
10. Ground nutmeg (Optional) - 1 pinch
11. Ground allspice (Optional) - 1 pinch
12. Ground ginger (Optional) - 1 pinch
13. Cayenne pepper (Optional) - 1 pinch
14. Shredded squash - 1 ½ cups
15. Plain yogurt - 1 ½ cups
16. Brown sugar - ½ cup
17. Raisins - ½ cup
18. Chopped walnuts - ½ cup

20. Vanilla extract - 1 teaspoon

How to cook deliciously - Quinoa Squash Muffins

1. Stage

Bring water and quinoa to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until quinoa is tender and water is absorbed, 15 to 20 minutes.

Preheat oven to 375 degrees F (190 degrees C). Grease 18 muffin cups or line with paper muffin liners.

Mix all-purpose flour, whole wheat flour, cinnamon, baking powder, baking soda, cloves, nutmeg, allspice, ground ginger, and cayenne pepper together in a bowl.

Stir squash, yogurt, brown sugar, raisins, walnuts, eggs, and vanilla together in a large bowl. Add flour mixture to squash mixture; stir. Spoon batter into prepared muffin cups.
