1. New potatoes, quartered - ½ pound
2. Fresh green beans - rinsed, trimmed and blanched - ⅓ pound
3. Tuna - 1 (5 ounce) can
4. Onion, thinly sliced - ½
5. Pitted nicoise olives - ¼ cup
6. Chopped fresh parsley - ¼ cup
7. Mixed salad greens - ½ pound
8. Lemon vinaigrette - 1 cup
9. Hard-cooked eggs, quartered - 3
10. Roma (plum) tomatoes, thinly sliced - 3
11. Anchovy filets - 4
12. Capers - 1 tablespoon

How to cook deliciously - Salad Niçoise

1. Stage

Bring a large pot of salted water to a boil; add potatoes and cook until tender but still firm, about 15 minutes. Drain and cool.

Combine potatoes, green beans, tuna, onion, parsley, olives, and parsley in a large bowl; refrigerate for 2 to 4 hours.
