Ingredients for - Shrimp with Black Bean Sauce

1. 1/2 lb. large shrimp -
2. 1 tbsp. sesame oil -
3. 1 tsp. garlic -
4. 1 tsp. ginger -
5. 1 tsp. jalapeño -
6. 2 tbsp. red pepper -
7. 2 tbsp. green pepper -
8. 2 tbsp. onion -
9. 1 tbsp. fermented black beans -
10. 1 tsp. shaoxing wine (or sherry wine) -
11. 1 tbsp. fresh scallion greens -
12. 1 tbsp. rice vinegar -
13. 2 tsp. oyster sauce -
14. 1 tsp. hoisin -
15. 1 tsp. dark soy sauce -
16. 3/4 tsp. palm sugar -
17. Salt -
18. Pepper -
19. 1 1/2 tsp. cornstarch -
20. 1/4 c. chicken stock -

How to cook deliciously - Shrimp with Black Bean Sauce

1. Stage

Combine sauce ingredients and set aside.

2. Stage

Heat wok over high heat for 30 seconds

3. Stage

Add sesame oil and coat the wok.

4. Stage

When the oil starts to smoke, add the garlic, ginger, jalapeños, red and green peppers, onions, and black beans.

5. Stage

Stir for 30 seconds and cook for 30 seconds.

6. Stage

Add wine by drizzling around the edges of the wok; mix well.

7. Stage

When the shrimp begin to curl and turn pink, make a well in the center of the mixture.

8. Stage

Stir sauce and pour in the well.

9. Stage

Mix to combine all ingredients, about 1 1/2 minutes, until sauce begins to thicken and simmers. Season with salt and pepper.

10. Stage

Turn off heat, remove to a heated dish, sprinkle with sesame seeds and scallion greens and serve with steamed rice.
