Ingredients for - Thai Shrimp Curry with a Kick

1. Uncooked large shrimp, peeled and deveined - 24
2. Salt - ¼ teaspoon
3. Cayenne pepper - ⅛ teaspoon
4. Extra-virgin olive oil - 2 tablespoons
5. Finely diced red onion - ½ cup
6. Garlic, minced - 3 cloves
7. Freshly grated gingerroot - 2 teaspoons
8. Lime, juiced (Optional) - 1
9. Sliced fresh mushrooms - 1 (8 ounce) package
10. Hunt's® Diced Tomatoes, drained - 1 (14.5 ounce) can
11. Chicken broth - 1 cup
12. Crushed red pepper flakes - ¼ teaspoon
13. Coconut milk - 1 (14 ounce) can
14. Fish sauce - 1 tablespoon
15. Thai basil, chopped - 8 leaves
16. Curry powder - 1 teaspoon
17. Chopped fresh cilantro (Optional) - ¼ cup
18. Lime, quartered (Optional) - 1

How to cook deliciously - Thai Shrimp Curry with a Kick

1. Stage

Sprinkle shrimp with salt and cayenne pepper.

2. Stage

Heat olive oil in a large pan over medium heat. Add the red onion and cook for 1 minute. Add the garlic and ginger and cook for 30 seconds. Add the lime juice and shrimp and cook until shrimp turn pink, about 1 minute per side. Transfer shrimp to a small bowl.

Pour diced tomatoes, mushrooms, chicken broth, and crushed red pepper into the pan. Cook until mushrooms begin to soften, about 5 minutes. Add the coconut milk, curry powder, fish sauce, and Thai basil. Cook until mixture has heated through. Transfer shrimp back to the pan, and cook for 1 minute more.

Serve with a lime wedge and garnish with cilantro, if desired.
