Ingredients for - Vegetarian Bean Curry

1. Olive oil - 2 tablespoons
2. White onion, chopped - 1 large
3. Dry lentils - ½ cup
4. Garlic, minced - 2 cloves
5. Curry powder - 3 tablespoons
6. Ground cumin - 1 teaspoon
7. Cayenne pepper - 1 pinch
8. Crushed tomatoes - 1 (28 ounce) can
9. Garbanzo beans, drained and rinsed - 1 (15 ounce) can
10. Kidney beans, drained and rinsed - 1 (8 ounce) can
11. Raisins - ½ cup
12. Salt and pepper to taste - ½ cup

How to cook deliciously - Vegetarian Bean Curry

1. Stage

Heat the oil in a large pot over medium heat, and cook the onion until tender. Mix in the lentils and garlic, and season with curry powder, cumin, and cayenne pepper. Cook and stir 2 minutes. Stir in the tomatoes, garbanzo beans, kidney beans, and raisins. Season with salt and pepper. Reduce heat to low, and simmer at least 1 hour, stirring occasionally.
