Ingredients for - Vegetarian Moroccan Harira

1. Vegetable oil - 2 tablespoons
2. Onion, chopped - 1 large
3. Tomatoes, diced - 2 pounds
4. Chickpeas, drained - 1 (15 ounce) can
5. Fresh cilantro, chopped - 1 bunch
6. Fresh parsley, chopped - 1 bunch
7. Fresh mint leaves, chopped - 20
8. Ground paprika - 1 teaspoon
9. Ground turmeric - 1 teaspoon
10. Ground ginger - 1 teaspoon
11. Harissa - ½ teaspoon
12. Saffron threads - 1 pinch
13. Water, or more to taste - 4 cups
14. All-purpose flour - 1 tablespoon
15. Cornstarch - 1 teaspoon
16. Cherry tomatoes, halved - ½ cup
17. Salt and ground black pepper to taste - ½ cup

How to cook deliciously - Vegetarian Moroccan Harira

1. Stage

Heat oil in a large pot over medium heat and cook onion until soft and translucent, about 5 minutes. Add tomatoes, chickpeas, cilantro, parsley, mint, paprika, turmeric, ginger, harissa, and saffron. Add water and cook over medium heat until flavors have combined, about 30 minutes.

2. Stage

Mix a few tablespoons of soup liquid with flour and cornstarch in a small bowl and return to the soup, stirring in well. Add cherry tomatoes. Bring to a boil, reduce heat, and simmer over low heat until soup thickens, about 10 minutes. Season with salt and pepper.
