Ingredients for - Zucchini Gratin Dip

1. Unsalted butter - 2 tablespoons
2. Onion, chopped - 1 medium
3. Garlic, minced - 1 clove
4. Grated zucchini - 4 cups
5. Water - ½ cup
6. Salt, or more to taste - ¾ teaspoon
7. Italian seasoning - ½ teaspoon
8. Ground black pepper - ¼ teaspoon
9. All-purpose flour, sifted - 1 tablespoon
10. Milk - 1 ½ cups
11. Cream cheese, softened - ¼ cup
12. Shredded Parmesan cheese - 2 tablespoons
13. Shredded Cheddar cheese - 1 cup

How to cook deliciously - Zucchini Gratin Dip

1. Stage

Melt butter in a medium pot over medium heat. Add onion and garlic to the melted butter and saute until onion begins to brown, 5 to 7 minutes.

Add grated zucchini, water, 3/4 teaspoon salt, Italian seasoning, and pepper. Reduce heat to medium-low and cook, stirring constantly, until zucchini is soft and most of the water has evaporated, about 15 minutes. Sprinkle flour over the zucchini and mix well, trying to avoid flour lumps. Reduce heat to low and cook for 2 minutes.

Add milk; stir well. Transfer about 1/2 cup of the zucchini mixture to a small bowl; add cream cheese and mix until well blended. Add this back to the pot and cook over low heat until dip begins to thicken, 5 to 10 minutes.

While dip is cooking, set an oven rack about 6 inches from the heat source and preheat the oven's broiler to low.

Remove dip from the heat and stir in Parmesan cheese. Taste and adjust salt if needed. Transfer dip to a shallow, oven-safe casserole dish and top with Cheddar cheese.

Broil in the preheated oven until Cheddar bubbles and starts to brown, 2 to 3 minutes.
