Ingredients for - Arancini

1. Olive oil - 1 tablespoon
2. Onion, finely chopped - 1 small
3. Garlic, crushed - 1 clove
4. Uncooked Arborio rice - 1 cup
5. Dry white wine - ½ cup
6. Boiling chicken stock - 2 ½ cups
7. Frozen green peas - ½ cup
8. Finely chopped ham - 2 ounces
9. Salt and pepper to taste - 2 ounces
10. Finely grated Parmesan cheese - ½ cup
11. Egg - 2 large
12. Milk - 1 tablespoon
13. Mozzarella cheese, cut into 3/4 inch cubes - 4 ounces
14. All-purpose flour - ½ cup
15. Dry bread crumbs - 1 cup
16. Vegetable oil for frying, or as needed - 1 quart

How to cook deliciously - Arancini

1. Stage

Preheat the oven to 200 degrees F (95 degrees C).

Heat 1 tablespoon olive oil in a large saucepan over medium heat. Add onion and garlic; cook and stir until onion is soft but not browned. Dotdash Meredith Food Studios

Heat 1 cup vegetable oil in a deep-fryer or large deep saucepan to 350 degrees F (175 degrees C).
